Quick and healthy flapjack recipe

I don’t know about you guys but I’m always looking for a quick, healthy, on the go snack!

If you’re looking for something that will keep you going, and tastes delicious without all the added sugar and calories, these flapjacks are perfect. They’re so nutritious and will genuinely keep you full throughout the day, plus they’re super simple to make!

You will need:

2 ripe bananas

2 Tbsp Coconut oil

2 Tbsp Peanut butter – I used wholeearth

250g Oats

Handful of Raisins

5 Dates

(ANY DRIED FRUIT OF YOUR CHOICE CAN BE USED)

To begin, add both the 2 tbsp of peanut butter and coconut oil to a saucepan or bowl and heat on the hob or in the microwave until it is a liquid consistency.

I did mine in the microwave for 30 seconds and then stirred until the mix was combined.

Then in a separate bowl mash the 2 bananas – make sure they’re ripe as mine weren’t quite ripe enough which made it difficult to mash.

Measure out your 250g of oats and chop 5 dates and a handful of raisins. As mentioned, you can use any dried fruit I just looooove dates and raisins.

Then combine all of your ingredients together in a bowl and stir the mixture.

It should look something like this and will be quite a sticky consistency!

Line a baking tray with some grease proof paper and spread the mixture out.

Bake for 25 – 30 mins on 175 degrees or gas mark 5.

And voilaaaa, yummy and healthy flapjacks!!
