I’m back with a recipe guysss! It’s long overdue but I’ve been loving sweet potato lately so really wanted to share one of my favourite recipes.
For this recipe you will need:
1 Large sweet potato
1 tin of coconut milk
5 tbsp of thai red curry paste (or curry paste of your choice)
1 tbsp chilli flakes
T tbsp coconut oil
1 cup quinoa
To begin heat your dish on medium heat and add tbsp of coconut oil. Meanwhile, chop your sweet potato into small chunks.
Once the coconut oil begins to sizzle add the sweet potato and lightly fry for around 5 minutes.
Then add your 5 tbsp on curry paste and the tin of coconut milk.
Wash your kale (so important) and add to the dish. Mix around, allowing the kale to absorb the liquids – this will help it to shrink.
Then add the spices of your choice – I added chilli flakes for that extra kick!
Leave on a low heat and allow the curry to simmer for around 20-25 minutes.
Whilst the curry is cooking, add one cup of quinoa to 2 cups of water and boil until soft.
Once the sweet potato has softened and you can really smell the flavours of the curry, turn the heat off and serve up with the quinoa!
